Paleo Garlic Mashed Cauliflower | Ultimate Paleo Guide
1 head Cauliflower (cut into florets)
2 cloves garlic
2 tbsp olive oil
1/4 cup Coconut milk
Fresh chopped herbs (optional)
Sea salt and fresh ground pepper (to taste)
Steam the cauliflower and garlic cloves in a steamer basket until very tender.
Transfer to a food processor and process until smooth (or alternatively, you can just mash with a potato masher.)
Stir in the olive oil, coconut milk, herbs if desired, and season with salt and pepper before serving.

My favorite Paleo dish, Thai Red Chicken Curry over Cauli-Rice. : Paleo
For Cauli-Rice:
1 head of cauliflower
1 tbs minced garlic
2 tbs fat (coconut oil, evoo, bacon fat, beef tallow, whatever sounds good)
Take the cauliflower and remove green stems. Break florets down into smaller pieces. Using a food processor on pulse, chop up cauliflower until it begins to look like rice. If you don't have a food processor, use a chefs knife and do work. Once you have a consistency you like (you can get it all the way down to cauli-cous cous if you want), head up a skillet pretty hot and add fat and garlic. Dump in the cauli-rice and stir until covered in the fat. Cover, and reduce heat to about medium low. Stir every couple minutes, and remove from heat when you get to 10 minutes.
For Chicken Curry:
1 lb of organic chicken
1/2 cup of shredded carrot
1/2 cup of minced celary
1 small onion, minced
2 small red potatos, diced small (optional for you no nightshades paleo folk)
2 tbs coconut oil
1 tbs minced garlic
1 tbs crushed red pepper
2 tbs Sriracha
2 tbs Curry paste (your choice of color, I used red)
1 can full fat coconut milk (around 15 oz)
3-4 kale leaves, sliced thinly
Cut your chicken into 1 inch cubes. Saute carrot, celary, onion, red potato, and garlic in 1 tbs of coconut oil. After the onions become traslucent (about 5 minutes), add the second tbs of coconut oil and brown the chicken. Once there is no more pink showing, add the curry paste and cook ingrediants together until it becomes fragrant. Add coconut milk, red pepper, and Sriracha. Stir ingrediants together and bring to boil. Once boiling, reduce heat to simmer, and stir in sliced kale leaves. Cover and let simmer for 10 minutes, stirring occasionally. Pour curry over and rice, eat, and feel godlike.
My favorite part of this is the versatility. Don't like chicken? Use beef. Want different veggies? Try Zuccini or Asparagus. You can also add whatever spices to the rice to make spanish, asian, etc. Plus, I can double the recipes and have lunch for a week.

Paleo Pumpkin Bread Again This Year : Paleo
Combine for 2 minutes in a food processor:
1 cup blanched almond flour
¼ teaspoon sea salt
½ teaspoon baking soda
2 tablespoons cinnamon
1 teaspoon nutmeg
½ teaspoon cloves
½ cup pumpkin
2 tablespoons honey
3 large eggs
Scoop batter into a mini loaf pan
Bake at 350° for 35-45 minutes
Cool for 1 hour
Slice and serve
I served mine with the top cream from coconut milk.
