Lower thermal conductivity of brick in contact with dough, along with indirect reflected IR from the vaulted ceiling of the oven, hit temperature sweet spots for dough and toppings/cheese. Home ovens generally have dough on metal, so too high conductivity burning the crust before the toppings are done. Using a ceramic plate won't help because home ovens don't generally go over 550F, thus drying out the dough before the toppings are done.
