Using tor would essentially hide the endpoint from clearnet public access, while potentially being able to penetrate firewalls. IoT safe remote access, or botnet C&C usage comes to mind. Interesting proof-of-concept though.

Semi-homomorphic encrypted database software, that basically allow you to run a database on an untrusted cloud server. There are some cryptographic weaknesses, but this seems usable for real world applications. Unfortunately, the amount of SQL support is limited due to the nature of the encryption algorithms involved.

BoxCryptor :: On-the-fly Encryption for cloud storage
Simple virtual drive setup that basically does realtime encryption. Real files sit on some local disk directory, show as unencrypted files on virtual drive. This solves the dropbox privacy problem by encrypting files before dropbox uploads them (dropbox would be syncing the encrypted real directory). Though Dropbox will hate you for it since that destroys their ability to dedup.

s3backer - FUSE-based single file backing store via Amazon S3 - Google Project Hosting
Interesting workaround method of using Amazon S3 as a large distributed virtual disk, splitting storage into filesystem block sized files served through S3. Rather creatively gets over some issues, but I wonder how much pain is involved. Apparently standard 4K block sizes can really nail you for PUT/GET costs, so maybe someting like 256K blocks? But you have to watch out for host RAM consumption due to block mapping.
