The difference? You invoke the rulerless, grid-configurable mode by tapping the pen icon in the bottom right corner.

You invoke the ruler-equipped, less-robust-colored mode by hitting the + icon next to it, and selecting "Add Sketch."

Why the two aren't integrated is beyond me.

The iOS Notes app has two distinct drawing modes.

One of them is affected by the grid you choose in Settings; the other is not. One of them lets you use the Ruler tool; the other does not. One has a different color selection UI than the other.

One serious drawback of this machine being capped at El Capitan (unless I install the newer model’s firmware, which is risky but might be an option) is it doesn’t benefit from all the perf work of later releases. El Capitan is sloooow.
