I Tried KFC's Secret Fried Chicken Recipe and Here's How It Went | Kitchn
This is where the Colonel's Secret Recipe comes into play. The seasoning is as follows:

2/3 tablespoon salt
1/2 tablespoon thyme
1/2 tablespoon basil
1/3 tablespoon oregano
1 tablespoon celery salt
1 tablespoon black pepper
1 tablespoon dried mustard
4 tablespoons paprika
2 tablespoons garlic salt
1 tablespoon ground ginger
3 tablespoons white pepper
I mixed the above seasoning with two cups of flour. While I am a large fan of the paper bag method for fried chicken, I don't see every KFC on the planet shaking chicken in a bag before frying, I skipped it this round and went with the more traditional flour-egg-flour dredge in shallow pans.

PLOS ONE: Chronic Low-Calorie Sweetener Use and Risk of Abdominal Obesity among Older Adults: A Cohort Study
With median follow-up of 10 years, low-calorie sweetener users had 0.80 kg/m2 higher body mass index (95% confidence interval [CI], 0.17–1.44), 2.6 cm larger waist circumference (95% CI, 0.71–4.39), 36.7% higher prevalence (prevalence ratio = 1.37; 95% CI, 1.10–1.69) and 53% higher incidence (hazard ratio = 1.53; 95% CI 1.10–2.12) of abdominal obesity than low-calorie sweetener non-users.

I bloody love processed food. Here’s my favourite summer processed pork belly dish. In an oven pan I sauté chorizo, onions and carrots, then deglaze with red wine. I reduce by half, top up with chicken stock and chuck in some brown sugar. I bring it to a simmer and then put in a big square of pork belly. I cover it with foil and put it into a low oven for four hours. Once cooked I let it cool a little, wrap it in cling film, and put it in the fridge overnight, under a weighted baking tray so it presses. The next day I slice it up into inch-thick pieces, and put those on to a smoking barbecue for a couple of minutes each side, until the meat is bronzed and the fat is crisped, and the air smells of good piggy things.

I know what you’re thinking (apart from: I wants me some of that pork belly). You’re thinking: that’s not processing. That’s home cooking. But what’s the difference? Count the stages: the sautéing, the deglazing, the braising, the cooling, the wrapping, the pressing, the cutting, the grilling. If that’s not a process I don’t know what is.

Aquafaba, or chickpea brine, is the liquid from canned chickpeas, used as an egg substitute because of its function as an emulsifier, leavening agent, and foaming agent.[1]

Vegan baker Goose Wohlt coined the term aquafaba ("bean liquid") to describe the liquid, which French chef Joël Roessel discovered could be used in recipes much like egg whites.[2]

Aquafaba has been used to create meringues, macarons, nougat and other products that normally require the use of eggs, making them suitable for people with egg allergies, vegans and lacto-vegetarians.[3]

There is currently no scientific consensus on the chemical properties of aquafaba and why it mimics egg whites so effectively.[4] Seed proteins, including albumins and globulins, as well as soluble fibers, sugars, and glycosides have been proposed as contributing to the similarity.[5]

Is Jello a solid or a liquid?
Actually it is neither. Jello is something that we call a colloidal suspension. The gelatin in Jello is made of long solid chains of protein molecules. When you mix the gelatin with hot water, these protein molecules break apart and become suspended in the water. However, the individual molecules remain solid. So this is not a solution. As the mixture cools, the protein molecules come back together to form long chains again. However, these chains go in random directions and form a lattice that traps the water molecule within its structure. So, what we have is a mixture of solid and liquid. When it's hot, then it is a solid suspended in a liquid. When it's cold, it's a liquid suspended in a solid. Thus it is classified as a colloidal suspension rather than as being either solid or liquid.

The Canadian Food Inspection Agency (CFIA) regulates the importation of pet food and related products in order to prevent the introduction of foreign animal disease which could pose a risk to the health of Canadian livestock. Some animal diseases can also pose a risk to the safety of the food supply and public health.

The CFIA also provides verification and certification services for pet foods that are made in Canada and intended for export.

The CFIA does not regulate pet food that is manufactured in Canada, and sold domestically. Individual Canadian pet food manufacturers are responsible for ensuring the safety and quality of their products.

Information for the public

If you suspect that a pet food is making your pet sick, please contact your veterinarian for diagnosis and treatment advice. You should also immediately inform the manufacturer and retailer of the pet food to let them know that you have concerns about the product.

Canadian pet food manufacturers and importers may initiate a recall or take other corrective actions if they become aware that their product could be harmful to pets.

In the case of a suspected human illness that may have resulted from contact with pet food, contact your doctor. If there is a confirmed link between human illness and a pet food product, the provincial or territorial health authority or the Public Health Agency of Canada may issue a health alert.

A Conspiracy of Hogs: The McRib as Arbitrage | The Awl
The theory that the McRib’s elusiveness is a direct result of the vagaries of the cash price for hog meat in the States is simple: in this thinking, the product is only introduced when pork prices are low enough to ensure McDonald’s can turn a profit on the product. The theory is especially convincing given the McRib's status as the only non-breakfast fast food pork item: why wouldn't there be a pork sandwich in every chain, if it were profitable?

Fast food involves both hideously violent economies of scale and sad, sad end users who volunteer to be taken advantage of. What makes the McRib different from this everyday horror is that a) McDonald’s is huge to the point that it’s more useful to think of it as a company trading in commodities than it is to think of it as a chain of restaurants b) it is made of pork, which makes it a unique product in the QSR world and c) it is only available sometimes, but refuses to go away entirely.

Cool Tools: Egg Timer
I love love boiled eggs. After several batches of edible, but less-than-perfect eggs, I was reminded of a nifty gadget my mom used to keep around. This little chunk of lucite reacts to heat the way eggs do, allowing you to cook a perfect hard-, medium- or soft-boiled egg. It works great, whether you subscribe to the "boil then add the eggs" method or if you prefer adding the eggs, then bringing the water to a boil.

Cool Tools: Banana Bunker
Whether I'm hiking or commuting to the office, this sturdy plastic sheath never fails. The two ends connect in the middle, where a slight turn locks the unit in place. Even when the bunker winds up at the bottom of my bag, the two pieces stay united. The straw-like section gives only slightly, so curvier bananas are harder to fit; really long bananas are a tight squeeze, too. However, in time, you learn to spot bundles in the market that will fit just right. I use my bunker no less than three times a week. Based on all the smooshed bananas I used to toss out, this contraption has already paid for itself dozens of times over.

Double Bucket Upside Down Tomato
This instructable is an easy to build upside down tomato planter using 2 five gallon buckets.  This planter is superior to commercial units- because of the extra capacity this planter provides.  The extra capacity results in a larger root system, which translates into a larger plant.  Also there is greater water holding capacity which means less frequent watering.  I produced over 40 pounds of tomatoes with this planter in one season.  My location is eastern North Carolina
