1 puff pastry sheet 9 x 12, cut into 9 2" strips. good video
Apricot or strawberry preserves. brush on pastry strip. In the alternative, just brush on some butter.
lay on apple slices; fold up bottom of the half of strip lenghtwise. sprinkle with cinnamon sugar. Roll into rose & place in muffin tin.
DO AHEAD: Can prep 1 day before baking.
Bake at 350 for 40 minutes. Let cool bit; take out and dust with confectioner sugar.

build caramel in iron skillet. set on ice cubes. arrange apple
wedges from 6 apples (granny smith, pink lady, honey crisp) in
concentric circles (or use sara's rose apple technique). cover with
pastry, bake 55 minutes. let stand 5 minutes. place platter over
skillet. invert tart onto platter. Brush apples generously with warm
brandied caramel sauce. if no brandy sauce, warm and strain apricot
preserves and brush with that for gloss. Let stand up to 30 minutes The
combo of apples (granny smith, pink lady, honey crisp if possible
