These spice-loaded meatballs have a Turkish inflection. The warm yogurt sauce adds tang and richness, along with a sprinkling of tart sumac powder and chopped mint. American "Greek-style" yogurt is not always tart enough, but it can be thinned with a bit of buttermilk or even lemon juice. Whisking it with cornstarch and egg produces a silky sauce. Though the ingredient list looks long, this is a simple and impressive dish to make.

This braise is festive and impressive enough to make for a dinner party, but it’s also easy enough to keep in rotation for a cozy family meal at home. I like to serve it over orzo or pilaf to absorb some of the the braising liquid, which is wonderfully flavorful and aromatic. The Meyer lemon relish brings the whole thing together; you’ll want to generously top your dish with this sauce (and any leftover relish is great on roast chicken or thinly sliced pork pressed between thick, crusty bread). Like so many braises, this one gets better with age. You can cook it up to two days ahead of time then reheat it an hour before guests arrive, as the flavors intensify the longer they hang out together.

Beyond the usual suspects, Nigel Slater adds portobellos, bay leaves, and stock in this SpagBol. Like most English SpagBol recipes, he uses red wine, not white.

Good God, there is a LOT of chopping. A less acidic Bolognese, which may please some people, and the milk/cream is added at the end, which is a bit weird, as it's usually added earlier. Not my favourite Bolognese, as I prefer a tomato-y one. However, the inclusion of stock is a good idea and I may integrate that into my usual Bolognese.

Braised Rosemary Lamb Shoulder Chops - Perfect Lamb Recipe
Made it with a few changes and it was delicious. Upped onion, garlic and stock (chicken, not veg), added some white wine to deglaze the pan, omitted the allspice and rosemary, and used four springs of dried thyme. Also did the whole thing in a Dutch oven and seared the chops before browning the garlic and onion.

These are not straight-up Italian meatballs. The sauce has a bit of North Africa as well as the Mediterranean in it, so the dish is exotic and comforting at once. The sauce has a whiff of cumin and mint, both good friends to ground lamb. Just before I serve the meatballs, I add little blobs of yogurt, crack a few eggs into the pot, and let them poach.

I would never make these just for myself; I would classify this dish as one of those you bring out for a dinner party because there is a lot of labour required. Bloomfield specifies that you grind your own lamb shoulder, for which I do not have the equipment, so I'd just ask my butcher to grind it for me per Bloomfield's specifications.

Kibbeh are common throughout the Middle East, generally made by mixing ground meat with bulgur and a host of seasonings. These torpedo-shaped meatballs come together quickly and make a stellar brunch, served with a quick cucumber salad and warm pita. A pot of mint tea is nice as well.

Feel free to make these kibbeh in a food processor (if you have one), just make sure to pulse the onion until it's fully broken down before you add the rest of the ingredients.
