Reviewers say to reduce the mustard by half, can use bacon instead of the salt pork, add the carrots 1 hour into the cooking process, may need to cover the pot completely instead of partially, and marinate the beef in red wine, rosemary and thyme for a day before cooking. Remove rosemary but save red wine and thyme to be used in the dish. Use the Pommery French Mustard!!

Paprika Chicken & Spinach with White Wine Butter Thyme Sauce ΓÇô The Kitchen Paper
Tweak the seasonings to be more creole/cajun, add cayenne pepper and top with green onions and serve over creamy grits. Call it Weeknight Cajun Chicken and Gritsor something.

Cava Gelatin Recipe : Dave Lieberman : Food Network
FN included a recipe in their Dec 2015 mag for a similar recipe which calls for simmering 1 cup sparkling wine with 1/4 cup sugar, stirring until it dissolves. Pour the rest of the wine into a bowl and add 2 1/4 oz. packets of gelatin. Let stand 1 minute and then add the hot wine mixture and whisk until dissolved. Divide among 6 flutes and chill until set, about 4 hours. Top with whipped cream (to mimic bubbles).

Beef Shiraz Pies Recipe
Not such a fan of this recipe as written - 86 the tomatoes and add quartered mushrooms - basically make a beef bourguignon. Makes a great leftover recipe blog post as the main dish will always taste better on the second day. State that it would also be great with any leftover stew.
