Woman battles cancer with diet; Harvard researchers to study her - Tri-State News, Weather & Sports
"DELAFIELD, WI (WISN/CNN) – A woman said her emphasis on diet helped her in her battle against cancer, and now her approach will be studied by researchers at Harvard University to see if it can help others.

For Kathy Bero, time in the kitchen is an investment in good health.

"It isn’t really about eating healthy," Bero said. "It's about eating specific foods that fight disease."

She ought to know. In 2005, doctors diagnosed Bero with inflammatory breast cancer. Her prognosis for survival was 21 months.

At the time, Bero was 41 years old and the mother of two young girls. She fought the disease with surgery, chemotherapy and radiation. But the cancer fought back.

"Eleven months after my first diagnosis, I was diagnosed with a high-grade tumor in my head and neck," Bero said.

The medication took its toll.

"My kidneys were failing; my liver was failing," Bero said. "My lungs were damaged. My heart was damaged. I told my oncologist that I'm done with that protocol because one way or another, I'm going to die. And I don't want to go that way."

It was then she decided to go off chemotherapy and use a strategy suggested by a friend.

"My friend kept saying you have to learn about anti-angiogenic foods," Bero said.

Anti-angiogenic foods essentially block the creation of blood vessels so cancer can’t easily spread. Examples include organic vegetables such as purple potatoes, carrots and leeks.

"Leeks are at the top of the cancer-fighting list," Bero said.

Also on her list: berries, walnuts, green tea and herbs, especially garlic.

"When a recipe calls for two cloves, I’m probably going to put in six because garlic is a really strong cancer fighter," Bero said.

Bero said her diet - combined with a type of alternative medicine called Reiki, along with meditation and visualization - worked.

"My doctors just kept saying, 'Huh. That is interesting,'" she said.

Today, more than 12 years after her first diagnosis, Bero, who is 54, said she's cancer-free and now works as a cancer coach.

"She's teaching me food is the best form of medicine," said Phil Baugh, one of Bero's clients. Baugh, a 43-year-old father of three, is fighting brain cancer.

"It's stopped growing now, so it's wonderful," Baugh said. "And a huge part of that is food."

Researchers at Harvard University learned of Bero's success and will study her method.

"It's exciting," Bero said. "I'm now validated. I'm no longer the 'crazy cancer patient.' There's a real science that is going to be there."

Bero said Harvard researchers will study people who've had exceptional outcomes.

"They're looking at our genetics and the genetics of the tumor," Bero said. "What the outliers did; their attitude, environment, faith, social support. What they're trying to do is create a database of all these different things and look for the commonalities between these people."

The lead Harvard researcher, Dr. Isaac Kohane, said that because these outcomes are so rare, this particular study will take some time to complete."

Not exactly "medicine-science-catches-up-to-folk-wisdom ", as there is nothing folk wisdom said about these channels, but it is interesting that this was never known about the body. The closest possible thing I could think would equate would be chi force from Chinese medicine or chakras from Hindu spiritualism, but I don't think it's the same thing.

10-Steps to A Healthier Body

1) Cut your carbs. Atkins was right: Not all calories are equal. You get a real boost to your metabolism by keeping your total carb intake below 50-100 gm (not counting insoluble fiber) per day. Once you’ve got the weight off, you can increase your carb count to 100-150. But if you have ever been overweight, eating more than 100-150 gm of carbs per day (depending on your size) will put the weight back on again, slowly but surely. 2) Avoid trans fats. Another metabolism-drag comes from trans fats, which damage fat processing enzymes to make you gain weight around your intestines. The lable can claim 0 gms of trans fat even when there is “secret trans” fat due to a loophole that only requires trans fat content be listed if there are more than .5 grams of trans fat per serving (as small as 1t) plus emulsifiers (‘glycerides’). To avoid trans fats, you must read the ingredients for all foods you buy (salad dressing, cereal, crackers, sauces, spreads) and avoid all of these “secret trans”-containing oils:

3) Do not buy low fat, low cholesterol, or fat free food alternatives such as egg-beaters, low-cholesterol spreads, skim milk, and low-fat ice creams.

4) Eat butter, eggs, cheese, and whole-milk. Studies show eating these foods improves HDL (good) cholesterol, bone health, brain health, and energy levels.

5) Eat vegetables with fat, salt, and an acid. This combination optimizes your body’s ability to absorb the antioxidants, vitamins, and minerals in greens.

6) Eat more vegetables that fruits. Fruits are better for you than candy for a treat, but they are a treat and you should eat 2- 3 servings of vegetables before you treat yourself to more fruit.

7) Learn to make bone broth. In order to exercise, you need to keep your joints in good shape. The number one miracle food for your joints and connective tissue (including bone) is bone broth because it contains compounds that act like growth hormones in these tissues.

8) Eat probiotic-rich foods. If your digestive system is crampy, gassy, bloaty, or otherwise making you not want to eat, when you do feel better you’ll be very tempted to treat yourself to something overly starchy or sweet. To keep your digestive system working smoothly, include probiotic-rich foods in your diet on a regular basis. The most popular probiotic-rich food in the US is yoghurt, and real pickles and sauerkraut are also great sources of digestive-boosting organisms.

9) Sleep. Your body will be exposed to excessive cortisol and pro-inflammatory hormones if you do not get enough sleep, and most people will do better with 8 hours than with the more-common 6-7 we sometimes have to deal with.

A company shouts from the hilltops "We have more X and more Y than competitor Z" - and if you're an uneducated consumer, you'll be like "Wow, and it's cheaper, too!" - when in reality "X and Y" are toxic and unhealthy, but because they're putting it on their packaging, it appears to be a benefit, not a drawback of said product.

12 Health Myths We Need to Stop Believing
Every one of these has a nugget of truth, but is so far off the mark as to be dangerous. Slide by slide critiques:

1) Not sure about this one, but Vitamin C megadoses aren't for curing colds, they're for something else that I think I read in either Deep Nutrition or heard on Dr. Gary Null (which could be quakery, considering he's a hardcore vegan)

2) They told the truth, but not the whole truth. They fail to mention that vegetables oils are toxic.

3) "Wiht few exceptions, dietary supplements are generally unnecessary." - true, but it's better to take them than not if you are eating a shit diet. Also, Vitamin D megadoses are absolutely necessary.

6) "you can't detox" and "you don't need an expensive green juice to do it" - actually you do. You should be blending your vegetables and eating them raw as much as possible. Fiber helps neutralize free radicals from vegetable oil and other sources.

7) "exercise is great for your body and your health, but evidence is mounting that it has little to nothing to do with your ability to lose significant weight and keep it off." - yes, but if you are only worried about weight, you are looking at the wrong thing. Exercise, even if you stay fat, is something you MUST do on a daily basis.

12) there's actually a study out of Norway (I think) that disputes this. It's not a firm yes, but I would still recommend using phones on speaker and not sleeping with them by your head

Study: There May Be a Link Between Processed Food and Cancer | Time
What's funny is that I thought I understood food before this, but after reading Dr. Catherine Shanahan's "Deep Nutrition" (not even done with it yet, but after becoming educated in the science), I look at an article like this with a skeptical eye.

I do believe that processed foods cause disease - but they're throwing around terms like "saturated fat" as if that's the problem, when they totally miss PUFA / vegetable oil angle.

I admittedly read quickly over the sections that discussed the chemistry of vegetable oil and why PUFA are so easily mutated, but just knowing that the science exists is huge.

In short, this article is good confirmation bias - and I do believe it, but it's a bit sloppy once you know that PUFAs and sugar are the big culprits. (although this article does state "The poor nutritional quality of ultra-processed foods likely contributes to their negative effects on health.", which couldn't be more true.

The problem with yogurt -- a MUST-read if you eat yogurt
Drink kefir instead, it has more live, active cultures and also higher quantities of them due to the longer fermentation period.

Lifeway brand kefir is best, as the dairy comes from grass-fed cows. In addition, kefir is 99% lactose free since the bacterial cultures do a lot of the pre-digestion.

I found it amazing that it's been known since the 80's that organic food is more carcinogenic (or rather, has more carcinogenic substances in it), the theory being that since organic food has to protect itself from pests, it creates these carcinogenic substances to kill/deter them. Those substances remain after the plant is picked and eaten, meaning they end up entering our bodies. Plants that are raised conventionally don't have to fight off pests, so the pesticide remains on the outside of the plant, which, presumably is removed if you wash it well enough.
