I already know that if I let the water boil and then put the eggs in, it takes 6 minutes. Their method of putting the eggs in and letting them warm up with the eggs states the 5 minutes is the right time, but today I did that and the yolk was not soft. Maybe I started timing 5 minutes too late?

The whole reason I bookmarked this is because it talks about the greenish-grey yolk being a result of overcooking:

"Setting your timer before a rolling boil will result in overcooked eggs with a greenish-gray ring around the center of the yolk. Ideally, it should only take 10 minutes to get the water hot enough to start timing."

5 Mistakes to Avoid When Making Burgers | Kitchn
Not strictly a recipe, but a list of tips for making good burgers.

In short:
- use 80/20 meat (80% lean 20% fat) - anything leaner will be too dry and crubly

- don't handle the meat too much. Shape it loosly into a patty and be done

- make a dimple in the center of the burger that makes it 1/4" thinner than the outer edge

- add salt right before grilling

- do not press down the burger when it's on the grill, as it squeezes the juices out

NOTE: According to this video by Trickious (https://www.youtube.com/watch?v=9iczvHCgdic), you press your thumb into the center, quite a bit more than 1/4" down. I'd say it's about half the thickness of the burger.

"What they discovered was that a 1-inch thick steak will thaw in about 20 minutes in room-temperature water and more like 10 or 11 minutes in water that is 100 degrees or so (like a hot summer day). It turns out that if you do the math, which these labs did, those thawing times are so short that they don’t give bacteria a chance to start growing and cause any trouble. So it turns out that thawing in 100-degree water is perfectly safe." .... Read on for the full technique, which involves using a lot of water compared to the size of the meat. (since frozen meat will cool the water if its only a little water.)
