Grilled Veggie Couscous Salad
Grill/roast portabello mushrooms, red bell peppers, lemons. Arugula, Pecorino, couscous.

I was pretty sure this would be great, and IT WAS TRUE. Made it with spring mix, goat cheese, and an added zucchini and onion because why not (and all roasted in the oven, not on a grill).

Update, having made this a few times: basically get arugula and feta and probably a red bell pepper, and then add whatever veggies you want. (I've done it with just those and an onion.

Grandma Maggio's Spaghetti Sauce Recipe -
Tossed in a dash of cinnamon, a larger dash of chili powder, and used a big can of crushed tomatoes and a normal can of garlic+olive oil diced tomatoes. Didn't add more salt, and only added a dash of sugar. Delicious!

This was really yummy! Er, that is, the second batch was, as I added more liquid, and I have no freaking idea why the recipe seems to think this can be done in a single 9x13 pan. For us it was almost exactly 2.
