Lentils and Rice with Fried Onions (Mujadarrah) Recipe -
Yum! This is actually one of my favorite dishes! The first time I had this, I was sort of eh - it's very different from anything the average white USAmerican is used to eating - but then I found myself craving it a few weeks later. It's such a good assortment of flavors! The more I make it - and I've made it maaany more times since then - the more I want it. *___*

This can totally be fixed with the rice cooker. Do step 2, then put the lentils and the rice (with the water from the lentils plus the recommended water for the rice) in the rice cooker (include oil). Then, while the rice is cooking, use the pan from the lentils to cook the onions. (Also, I (apologies) dump a fourth of a teaspoonish of garam masala into the rice cooker.)

Tortilla Soup [WARNING: DOES NOT CONTAIN TORTILLA...? i have no idea what else to call this]
This is a super cheap and easy recipe!  So much so that, a few minutes after I saw it, I went and fixed it.  Contains only ingredients that we have all the time, is a tremendous no-brainer, and is quite delicious!

IDEAL CASUAL GUEST DINNER: This soup and cheese quesadillas with guacamole. I'm a genius. (You could make chicken quesadillas if you had a non-veggie guest.)
