One Pot Sausage and Sun Dried Tomato Pasta - Budget Bytes
YUM, great. I accidentally made this with jarred pepper instead of sundried tomatoes (misremembered what I had), and it was still great! I also tossed in some spinach that was sad in my fridge, and added some red wine vinegar at the end for acid. YUM.

Food Wishes Video Recipes: Chicken Riggies
1 link hot Italian sausage, some mushrooms, boneless skinless chicken thighs, marsala or white wine, can of whole San Marzano tomatoes, heavy cream, some peppers, olives, parsley, cheese.... lots of ingredients I don't usually have, but I bet it's good.

UPDATE: YEP, SO GOOD. Definitely yes on the marsala wine (couldn't find wine wine but the marsala cooking wine is next to the vinegars in my store (??)). Michael's suspicious of fennel, so we just used ground pork + lots of paprika and chili and a little herbs de provence and it was still great. Great weekend meal - drink wine, play a board game while it simmers for an hour.

Marinated Chicken Pita Sandwich Recipe -
I did this marinade but baked the chicken for ~8 minutes on each side at 400 instead of cooking it on a pan. (Hey, dummy, put the pan in to preheat with the oven, the second batch was much better browned than the first.) Real good! And made a good date night, making these plus falafel together and then putting out pita, pickles, cucumber/yogurt sauce, hummus, tomatoes, greens. (This would also work well for a party or game night, though it'd have a fair bit of prep required.)

Creamy Chicken and Mushroom Soup - Damn Delicious
Yum! Made it with Zac while I was sick. Very easy and good! I do recommend cooking the onions and carrots (and celery, if used) a bit before moving ahead with the mushrooms and other stuff. Don't need to really BROWN the chicken; there was so much liquid when it was initially cooking that it came out wonderfully soft and creamy. Also, buy whole baby Bellas and slice them really thin you coward

Food Wishes Video Recipes: Caldo Verde – My Green Soup Redux
THIS IS DELICIOUS, except wow the miracle happen and I made it TOO salty. GOSH.

I did this with $5 5.5oz of chorizo, 1.5 red onions, 2 russet potatoes, and 1 bunch of kale. It was like, 5-6 meals for me? I wish I had more kale, and possibly the salt wouldn't have been as much of an issue with a different/better sausage. IDK. Like I said, still great, and would totally work for a pork-friendly game night with about 1.5 hours of cooking time.

Next game night: okay, so making it before was fine, BUT. Next time, if there even MIGHT be more than 4 people, just suck it up, buy 2 packages of chorizo and use 5 potatoes and 1.5-2 bunches of kale, okay? Yeesh. Also, Betsy, 3 pounds of potatoes is 3 large potatoes, not 2. Also CHOP THE KALE SMALLER THAN YOU THINK, OKAY, THEN SMALLER AGAIN. ALSO DON'T OVERCOOK IT.

Nghhhh. Get some big shrimp, sear a little bit, add in a billion crushed garlic cloves and some butter and lemon juice and parsley.

UPDATE: NGHHHHH. I didn't get terribly much of a sear - if using frozen, thaw AND DRY OFF BEFOREHAND, BETSY - but goooooddddddd was this good.

Pan-Seared Tuna with Avocado, Soy, Ginger, and Lime Recipe | Tyler Florence | Food Network
putting these notes at the top since they're important: DEAR DUMBASS, PAT THE FISH DRY BEFORE YOU PUT IT IN THE PAN. Please actually remember the entire point of ahi tuna is that the inside isn't cooked. Also, BUY ENOUGH LIMES/definitely keep the ratios in the original recipe and/or actually use more lime juice and less soy sauce.

THIS IS SO EASY AND SO GOOD. I did it without jalapeno, since I'm a monster, but probably I'd use it for a guest and you should DEFINITELY use everything else without skimping. (Also, I'd use a little less salt next time and maybe a little bit more sugar in the sauce.)

NOTE: each person involved here should get one avocado. And yes, I personally enjoyed this plenty with a pile of greens next to it that I covered in the sauce and also ate with avocado.

Greek Lemon Chicken and Potatoes Recipe -
Yummm. This got a little strong reheated - I followed the reviewers in cutting the olive oil in half, and I actually think I'd halve the salt next time, too. (I think it was the broth that made it so salty.) Anyway, took about 45 minutes for Brendon and I to get this and a cucumber salad (with fresh oregano, to stay on theme) ready, and it was about another 20 minutes after that for us to eat. Dirties up a bowl and an oven dish, though I think next time I'll just start in the oven dish.

Baked Salmon with Lemon, Dill and Parsley - simply fresh dinnerssimply fresh dinners
[using this as a bookmark to say what I did that was amazing and SUPER EASY] oh my god friends, LET ME TELL YOU ABOUT ONE OF THE GREATEST MEALS I HAVE EVER FIXED MYSELF, WHICH WAS ALSO ABOUT $7 EVEN WITH WILD ALASKAN SALMON AND LEFTOVERS, WHICH TOOK LIKE 5 MINUTES TO PREP AND 20 MINUTES TO COOK. I could go look for a goddamn personfriend right now just so I can awe them with this goddamn food, omfg.

Preheat oven to 425. Wash and halve brussels sprouts. Put brussels sprouts in small tupperware container. Add olive oil, garlic salt, black pepper. Toss to coat. Put brussels sprouts on pan, put pan in oven to start them cooking [THIS SHOULD ONLY BE FOR LIKE A MINUTE OR TWO, OK]

In the tupperware, add a shit ton of dill, plus lemon juice, plus more olive oil, plus more garlic salt. Stir, taste.

Take the pan back out of the oven, flip sprouts, put the salmon in the center, cover it with sauce. (Move it around a bit so the skin side gets some too.

Put the pan back in the oven, turning the oven down to 375. Keep it that way for... some amount of time until the salmon is starting to look like cooked salmon on the outside. Switch to broil. Broil until done.

Remove, put on plate, feel like a GOD.

(I did this with .4 LBs of wild-caught salmon, which was on sale at Whole Foods for $13 a lb... making the salmon cost me $5.20 for me. However, I had a little under half of it leftover, being a tiny person!)

Casual Kitchen: Easy Pasta Puttanesca Recipe
Fine fine fine, I want to try making puttanesca! It's got canned whole tomatoes, olives, anchovies in oil, capers, and various spices oil etc that I always have.

Update: made it using diced tomatoes and, uh, dried anchovies because I had them. Would not recommend the latter unless you can really get them chopped up finely... I was hoping they'd dissolve or at least get soft, but they really didn't, so the flavor was good but the texture wasn't perfect. But I'll definitely try it again with canned anchovies like an adult!

Oh, and definitely add a big pinch of sugar.
