Aloo Gobi (Potatoes and Cauliflower) Recipe | Bon Appetit
There is a video that goes along with it! (argh I need to get asafetida)

Update: this is DELICIOUS. Get real lime and ginger and do NOT skip the cilantro! I subbed garlic and onion powder in for the asafetida since I didn't have any, and significantly upped the spices since mine aren't the freshest. Michael liked it too! (Though he did note that he would have had to eat a LOT of it if he hadn't already eaten some before he came over.)

YUUUUUUM. Okay, at first I was like "god why am I doing this in the cast iron instead of the oven," and uh, I did actually give myself some grease burns, WHOOPS, corn's got some liquid in there. DEFINITELY break the corn into halves or thirds, because the cast iron skillet isn't flat and a lot of it won't be touching the bottom if you put it in whole.

Jambalaya Recipe -
Hooray! I'm happy with how this game out on my first jambalaya attempt ever for game night! I did 1.7 lbs chicken, ditched the red pepper flakes, and did half can tomato puree, .75 can Italian diced tomatoes. Sliced and sauteed the sausage in butter and oil in my normal pot, removed (next time do half slices instead). Sautéed the chicken breasts WHOLE, removed, nice fond, let them rest while I did the veggies, then cut them up. Added them all back in with a bunch of other stuff, and I added a bay leaf- and next time, this is the part I'll probably skip; I'll let everything BUT the chicken simmer together for those extra 10 minutes, I think, and then put the chicken in for just like, 1. I'll also use more hot sauce next time, I think, and reduce the salt... the sausage was spicy and salty, but the rest of the dish was just salty and just sliiightly less flavorful than I wanted. Rice amount was perfect even with the increased chicken and tomatoes. Fixed alongside a bag of rosemary olive oil cornbread from HEB (homg) and a thing of coleslaw. I think that would have comfortably fed a game night of 6, and was a little tight for a game night of 7.

Food Wishes Video Recipes: Chicken Riggies
1 link hot Italian sausage, some mushrooms, boneless skinless chicken thighs, marsala or white wine, can of whole San Marzano tomatoes, heavy cream, some peppers, olives, parsley, cheese.... lots of ingredients I don't usually have, but I bet it's good.

UPDATE: YEP, SO GOOD. Definitely yes on the marsala wine (couldn't find wine wine but the marsala cooking wine is next to the vinegars in my store (??)). Michael's suspicious of fennel, so we just used ground pork + lots of paprika and chili and a little herbs de provence and it was still great. Great weekend meal - drink wine, play a board game while it simmers for an hour.

Beef Stroganoff for Instant Pot® Recipe -
Per reviews, use beef broth instead, and maybe half soy sauce half worcestershire sauce.

UPDATE: Made it for game night and thought it was great! Will definitely add it to the semi-regular rotation. I did the worcestershire sauce and beef broth substitutions, added cream cheese, and cut up 3lbs beef chuck (it was really good... but I think for future game nights I should just buy stew meat). I also increased it to "11 servings", which ended up being about 7 dinner servings for adults. I cooked 2 14oz packages of noodles - about a half of a bag outside of the pot since they didn't fit - which turned out to be maybe a third of a bag more than I needed. So I could probably just cook as many noodles as fit in the pot and be okay for 7 servings.

I did this marinade but baked the chicken for ~8 minutes on each side at 400 instead of cooking it on a pan. (Hey, dummy, put the pan in to preheat with the oven, the second batch was much better browned than the first.) Real good! And made a good date night, making these plus falafel together and then putting out pita, pickles, cucumber/yogurt sauce, hummus, tomatoes, greens. (This would also work well for a party or game night, though it'd have a fair bit of prep required.)

Yum! Made it with Zac while I was sick. Very easy and good! I do recommend cooking the onions and carrots (and celery, if used) a bit before moving ahead with the mushrooms and other stuff. Don't need to really BROWN the chicken; there was so much liquid when it was initially cooking that it came out wonderfully soft and creamy. this is SO GOOD. It's also super easy and cheap and fairly healthy, especially since I'm enjoying it more without rice than I think I would with!

I halved it. Saute onions, add garlic (jarred was fine), add other spices plus a decent pinch of cayenne, add lentils, add broth (ditto, Better than Bouillon) and diced tomatoes (I used plain), and a big pinch of salt. Bring to a boil, then simmer for like 20 minutes and it's done! It's pretty good like that even if you don't have fresh basil, but OH MAN the fresh basil really makes it excellent. spinach sheet pan quiche – smitten kitchen
YUM. I made this for a board game night – cooked it the night before and reheated it (325F, 25min with foil on), and thought it was EXCELLENT. This is despite the fact that I used a pyrex baking pan, forgot to grease it, and just blind baked the crust with foil pressed in and no weights. :)

It’d feed 4 adults pretty well, and 5 adults with a side (I just did frozen breakfast potatoes). Also, I am slow AND stupidly forgot to have the spinach thawing before I started AND got a workout whisking the cream cheese by hand, so I’d say it took me about an hour to get it into the oven.

MADE TIME #2: as always, second time is sloppier after the first time's great results. Dear Betsy, THAW THE SPINACH BEFOREHAND. If you're cooking it for game night the next day, take it out the SECOND you get home (ditto if you're using frozen cheese!). I was definitely more careless with the squeezing this time and the result is waterier and spinachier. Also, I had way TOO LITTLE filling this time, weirdly; maybe the spinach deflated it, or maybe it was the frozen cheddar . I think next time I'll try 7 eggs.

Slow Cooker Buffalo Chicken Mac and Cheese - Slow Cooker Gourmet
THIS WAS GREAT I THOUGHT. Only thing is that the recipe doesn't tell you to buy blue cheese to go with it, which, whaaat. Also, I doubled the recipe, and had too much cheese sauce relative to the chicken IMO. DON'T FORGET THE BLUE CHEESE.

Game night 2/21/18: 6 people, mostly smallish. 2.10 lbs chicken breast with normal doubled amounts in with the chicken while it was cooking. 1.6 lbs pasta. Probably could have only done 1.5x the cheese sauce amount. Had 2 servings of leftovers for me.

Also, my leftovers were arguably even better, so I could really probably make this one the night before. Do the chicken in the Instant Pot, shred, keep a little of the cooking liquid with the shredded chicken and reserve the rest to cook the pasta the next day. Make the cheese sauce the night before and combine with the chicken.

Easy Lasagna II Recipe -
I made this with ground turkey for game night! It was very tasty and pretty easy. I cooked it the night before, then to reheat it, dumped in a little more water, wrapped it in aluminum foil, and put it back in the oven for a half hour. It was about 8 servings.

The reviews are right - holy COW is this too much cheese. I used 24 oz of cottage cheese and it was STILL too much - basically I think you can halve this and be okay.

EDIT 3/14/19: Okay, I do really like this recipe, but I am SO BAD ABOUT INGREDIENT AMOUNTS I GUESS. So I tried to double it, but I didn't buy the right amount of tomato sauce, so I got this MONSTROUSLY meaty (really good) 9x13 lasagna. Had that, 2 bags mixed salad, French bread, fed 7. Had about 2 me-sized servings left after.

EDIT 8/15/19: Like, 1.5 pounds of ground turkey, two things of pasta sauce, 3/4ths big thing of cottage cheese should be pretty good.

One person suggested 3/4 cup Old Bay to 6 quarts water, and I think that's pretty right. I also added in some garlic cloves and lemon juice as suggested (though omg, I should have bought real lemons, what is wrong with me). After you dump it, there'll be Old Bay left in the bottom of the pot, so you can just mix everything up in there. Slow Cooker Buffalo Chicken Wing Soup Recipe -
YOM, good, made it for a game night to positive reviews all around! Also, when this says it makes exactly 8 servings, it literally means it. Dang.

First time: When I made it I omitted the sour cream entirely and used half fat-free half-and-half. I also used lots of mild buffalo sauce instead of hot sauce. I might agree with the person who put in a packet of ranch dressing mix!

Second time: only cooked it 8 hours, veggies were not done, not good, wahhh

Third time: HOW DID I FIT ANYWHERE NEAR THAT MUCH IN MY SLOW COOKER?!?!? Wtf wtf. So this time was really delicious if baffling. I did: three potatoes, 3 stalks celery, two carrots, 2 chicken breasts, 4 cups normal half n half (1 quart), a quarter cup sour cream, and I think a half or 3/4 cup actually Hot hot sauce. It was at the absolute top of the cooker, and yep, 8 servings. AND THE VEGGIES STILL WEREN'T FULLY DONE. I guess it's time for me to embrace the slow cooker function on the Instant Pot, and next time pressure cook the potatoes and chicken first, then add everything else and slow cook.

FOURTH TIME: okay, it was good again! Uhhh. So I pressure cooked the diced potatoes, celery, and carrot for 1 min in 1.5cups broth, panicked thinking oh god they're way too done, SEPARATELY pressure cooked the chicken in some half&half and hot sauce and one of the cans of soup, shredded it, combined it and the veggies and most of the other ingredients and stuck it in the fridge, then reheated before game night. So... the good news is, I could make this the night before. Also, with the 1.5cups of broth, I ended up using 2.5 cans soup, 4 cups half&half, about a bottle of buffalo sauce, maybe a quarter of a packet of Ranch mix, and maybe half the sour cream.

Layered Chicken Enchiladas with Tomatillo-Cilantro Sauce recipe |
OKAY FUTURE SELF, here is EXACTLY what you did on these and they are DELICIOUS:

~Make shredded chicken the lazy way: thaw chicken breast, heat olive oil, brown chicken on both sides, boil it for a bit in chicken broth, shred.
~Put quartered tomatillos, a bunch of minced garlic, and half an onion chopped up into the chicken broth and simmer under tomatillos were soft/less bright green.
~Add that mixture plus cilantro PLUS SOME HEB GREEN SAUCE into food processor to make INCREDIBLE RESULTS. In the meantime, I had some kale to kill, so I softened that down in the saucepan with a little bit of liquid left.
~Layer it all in a casserole dish, and cook at 400. The top cheese got very crispy.

I do wish I'd maybe done this properly and used corn tortillas actually rolled up - the flour ones got a little soggy - and added a little more salt. But gaddang is it good.

I cooked angel hair pasta (1 serving for me) in big pot. Then, in little saucepan, I heated some olive oil and dumped in a couple forkfuls of minced garlic (from a refrigerated jar). I added some lemon pepper, too, especially because I was super dumb and don't actually have EITHER lemon or lemon juice right now.

After a few minutes, I lazythawed a couple handfuls of frozen salad shrimp under running warmish water, then tossed them into the saucepan and let them get all coated and warmed up a little. For future reference for me: I used the little square baking dish. Put a bunch of quick oatmeal in it, added in random guesses on the dry ingredients; added random guesses on the wet ingredients to a cup (1 egg only and a little oil + applesauce) and then mixed it all together. Then I added real peach and blueberries, and then baked it at 350 for about 25 minutes.

Dinner Tonight: Baked Chicken with Roasted Tomatillo Cream Sauce | Serious Eats : Recipes
Made it and it was gooooooood. I used two chicken breasts and about 4.5 tomatillos (one was dinky), threw about half an onion into the sauce, and subbed in Greek Yogurt (delicious and way healthier). Basically, you roast the tomatillos and some garlic cloves in the oven, stick em in a food processor with cilantro and onion, process it, mix it with the yogurt and some water, pour it on top of the chicken, and bake. Doing it again, I'd probably brown the chicken first - but even so, I really enjoyed this.

Lemony Chickpea Stir-fry Recipe - 101 Cookbooks
So I just needed to use some zucchini and kale, but this turned out to be actually much better than expected! I didn't even add the tofu (see: using up super perishables). My only regrets were that I added too much olive oil (I did it for flavor but it got oily, might omit completely next time) and that I made the zucchini chunks too large.

EDIT: Made it again, added tofu. Yommm. (I cooked the tofu at the end with the zucchini to keep it in nice discrete pieces.)

Pasta with Shredded Chicken and Rosemary - Framed Cooks
YUM, this was easy - uh, if you have a chicken breast ready for shredding or some chicken - and really pretty good. Reheats well, too. (I used Asiago cheese, btw, because I have a ton frozen.)

Eggplant Green Curry Recipe | Simply Recipes
EGGPLANT TOFU CURRY that I made and enjoyed heartily: Use this recipe's instructions for the eggplant and (separate saucepan) curry paste. Saute the tofu, too. Add the coconut milk, some lemongrass, a fair amount of brown sugar, half a cube of chicken broth, and, like, a quarter cup of water at most to the curry paste. Put the sauce in with the eggplant, simmer it for a little but DON'T OVERCOOK IT BETSY, toss in some frozen stirfry veggies, be happy.

Slow Cooker Chicken Marrakesh Recipe -
Mom recommended this and... it's actually a form of sweet potatoes that I like! Served it for me and tallmatt over couscous, and we both liked it. Onion, garlic, sweet potato, carrot, chickpeas, chicken, spices, diced tomatoes. 4-5 hours in the slow cooker, could do it for game night if I came home to start it.

Green Bean & Mushroom Casserole - Budget Bytes
friggin' budget bytes!!! I made this on a sort of whim - I've had green bean casserole maybe twice in my life and didn't really care about it much either way - and of course it's friggin DELICIOUS. The good news is that this is a lighter recipe than normal. I made it with frozen green beans and otherwise exactly how she describes, and it's awesome. ... I then ate half of it as my entree, but I guess I should tag it appetizer/side, really.

THESE ARE SO GOOD, TBH MUCH BETTER THAN I REALLY EXPECTED. :D Er, that is, these PLUS CHOCOLATE CHIPS and WITHOUT RAISINS, because... yeah. I don't feel like that needs any explanation. Anyway, I made them for a work fundraiser and they were AWESOME.

Quite nummy! It does, however, legitimately take a long time to cook, even if you have it in teeny tiny pans, AND the recipe really does make a LOT. But yeah, good!

chicken & lime soup - Budget Bytes
Yaaaaay, I made this and it is good! :D! And it was indeed easy - a fair amount of prep and a long wait, but it makes plenty and nothing about it is difficult. (I especially like that you just blop the chicken breast in and don't have to do ANYTHING to it before it's 100%-for-sure cooked. Yeahhhhh.)

(Onion, celery, chicken breast, tomatoes + chiles, cilantro, lime, and avocado. Um, this time when I made it, I accidentally opened the lime+cilantro tomatoes instead of the chiles+tomatoes, so I added in some chipotle powder. Too much powder, as it turned out - next like, no more than 1/2 tsp for me, plz.)

Sirloin Tips and Mushrooms Recipe -
Pretty easy and quite good! I followed the comments and used sherry and fresh mushrooms; next time I'll go with them on the diced tomatoes, too (but I only had .6 lbs of meat, and I was worried about it thickening, so I didn't want to open both sauce and diced tomatoes). I did overcook the meat a bit, so make sure you have everything (sauce-wise) ready when you start it browning.

Chicken Ranch Dijon Recipe -
*despairing face* you cook the chicken and then you simmer it in a sauce that you make out of dijon mustard, white wine, and ranch dressing... and then you put it all over angel hair pasta.... and it's so good (especially... when you make the ranch yourself), and pretty cheap and easy...

Couscous With Raisins, Zucchini and Feta Recipe | Cookthink
I'VE MADE THIS TWICE NOW and the second time I actually used the ingredients and directions in the recipe uhhh AND IT'S REALLY GOOD. Cut up the zucchini, saute for a bit, dump in garlic and raisins, saute a little, dump in couscous, saute a little, then dump water&bouillon/broth on top of that, bring to a boil, take it off the stove, and stick feta on it. AND IT'S REALLY GOOD.

(nts: this last time I used 1 small zucchini and 1/2 cup couscous. Excellent ratio.)

2 cups low-sodium chicken broth
2 medium zucchini, quartered and sliced into thin triangles
1 tablespoon unsalted butter
1 clove garlic, minced
1/2 cup raisins
1 cup couscous
4 ounces feta, crumbled

1. Bring the broth to a simmer in a small saucepan. Meanwhile, cut off and discard the zucchini's root and bottom end. Cut the zucchini in half lengthwise, then cut the halves in half lengthwise. Slice the quarters crosswise into 1/4-inch triangles.

2. Melt the butter in a large saucepan over medium-high heat. When the foam subsides, add the zucchini. Season with a light sprinkling of salt and pepper. Cook, stirring once or twice, until the zucchini is tender and brown in spots, 4-6 minutes.

3. Stir in the garlic and raisins and cook 30 seconds. Stir in the couscous until it is well coated with the butter, zucchini and garlic, about 1 minute.

4. Pour in the simmering broth. Bring the couscous to a boil, stir, then cover and remove the pan from the heat. Let the couscous absorb all the liquid, 10-20 minutes. Fluff the couscous with a fork, and stir in the feta.

Turkey Meatballs
Yum! These are pretty foolproof, fairly effortless if you use a food processor for the onion and garlic and parsley, and quite yummy. The instructions are weird, but the reviews are helpful: you can cook the meatballs for 30 minutes at 350F in the oven on any old baking sheet. (Also, I used Italian breadcrumbs, and omitted the parsley and oregano.)

Makes a lot, so I'm going to freeze a load of them and just pop them into/onto things whenever I want! For tonight, I put them on some bread, poured some tomato sauce on them, slapped on some slices of mozzarella, and gave the whole thing a few minutes in the toaster oven for an easy meatball sandwich.

Southwestern Zucchini and Black Bean Casserole | All About Food
Made this! We both really like it, actually - it's a lot like those black bean zucchini enchiladas I make sometimes, just without the tortillas. Onion, green bell pepper, tomatoes, chili powder, oregano, cumin, black beans, shredded zucchini, and cheddar cheese. We omitted the chips because I don't see how they wouldn't just get hella soggy??

EDIT FOR MY AMAZING MODIFICATIONS: Okay! We didn't have some stuff, and we needed to get rid of other stuff, so here's exactly what I did (note: base is halved recipe, fits in 9x9): Sauteed chopped onion in olive oil and added ~1/6th tsp garlic powder. Added cumin, oregano, chili powder, 14 oz can of diced tomatoes and mild green chilis, 1 mini can of tomato sauce, AND 1/8th+ TSP OF CHIPOTLE CHILI POWDER!, let boil and then simmer for a while. Cover the bottom of the pan with half can of drained/rinsed black beans. Sprinkle frozen corn and (if you want) frozen broccoli on top of that. Spread half of tomato mixture on top, then cover that with cheddar cheese. Add the rest of the beans, another layer of corn, the rest of the tomato mixture, and then more cheese. Cook in the oven for 15 minutes. (Remember that this is halved.) I really liked crushed tortilla chips on it (added as I ate it, not cooked on). Both of us agreed it was one of the best things I've fixed in a while! It'd probably be good with zucchini, still, too.

French Lentil Soup
I am pleased to report that this is just as good, if not better, than that other one I make sometimes, and it's rather simpler. (I am especially pleased because, through sheer chance, I ended up feeding two people who've I've recently prepared mediocre-or-bad food for. Both said it was delicious! Yay!) Very simple ingredients - lentils, carrots, celery, onion, diced tomatoes, garlic, broth, optional vinegar - and pretty straight-forward. I used an extra garlic clove, because GARLIC, and it doesn't have any other spices.

Black bean and tomato soup
This officially takes 4 19oz cans of black beans and 1 28oz can of diced tomatoes, but I think I'll try it again sometime with dry beans. Anyway, when I made this tonight, I used - shhh - 1 can of black beans and 3/4ths of a can (normal sized) of diced tomatoes. (Also,a sweet onion instead of red.) Whatever, it was DELICIOUS, and both me and Michelle liked it. Will make again!

(Ingredients: Beans, tomatoes, carrots, celery, onion, garlic, stock, paprika, cumin, chili powder, and cilantro)
