Hot Dog Bar - How to Make a Hot Dog Bar + 8 Fancy Hot Dogs
EXTREMELY successful game night - this is definitely way more expensive than my usual stuff but will be a fun yearly event for sure. 7 people. Bought a pack of 5 nice fatter sausages, 6 decent beef dogs, 8 pack of Oscar Meyer beef dogs, and 8 pack of turkey dogs; ended up with 5 left over, much to my surprise. Probably banana peppers are perfectly sufficient for Chicago dogs. Buffalo dogs probably not worth the extra execution. I DO wish I didn't forget a sauerkraut option, so probably I'll swap those out next time. I just got a bag of coleslaw and made up half of it and used the other half as cabbage/lettuce option. Didn't do the grilled Mexican street corn dog or jalapeno apple slaw dog, though the latter sounds especially great. Grilled pineapple was good but I'm not sure it was popular enough that I couldn't trade it out if I did the jalapeno apple slaw (and BBQ sauce could go with coleslaw anyway).

Hooray! I'm happy with how this game out on my first jambalaya attempt ever for game night! I did 1.7 lbs chicken, ditched the red pepper flakes, and did half can tomato puree, .75 can Italian diced tomatoes. Sliced and sauteed the sausage in butter and oil in my normal pot, removed (next time do half slices instead). Sautéed the chicken breasts WHOLE, removed, nice fond, let them rest while I did the veggies, then cut them up. Added them all back in with a bunch of other stuff, and I added a bay leaf- and next time, this is the part I'll probably skip; I'll let everything BUT the chicken simmer together for those extra 10 minutes, I think, and then put the chicken in for just like, 1. I'll also use more hot sauce next time, I think, and reduce the salt... the sausage was spicy and salty, but the rest of the dish was just salty and just sliiightly less flavorful than I wanted. Rice amount was perfect even with the increased chicken and tomatoes. Fixed alongside a bag of rosemary olive oil cornbread from HEB (homg) and a thing of coleslaw. I think that would have comfortably fed a game night of 6, and was a little tight for a game night of 7.

Slow Cooker Eggplant Lasagna
Slice eggplant really thin, layer with onion, bell pepper, cottage cheese, mozzarella, and pasta sauce! Cook for 2.5 hours in slow cooker.

update: ehhh, cooked it, and it was... so-so. Maybe if I had salted the eggplant like an hour before it would have been less bitter, and if I'd used a much sweeter sauce? Probably wouldn't bother to try it again.

UPDATE: Made it for game night and thought it was great! Will definitely add it to the semi-regular rotation. I did the worcestershire sauce and beef broth substitutions, added cream cheese, and cut up 3lbs beef chuck (it was really good... but I think for future game nights I should just buy stew meat). I also increased it to "11 servings", which ended up being about 7 dinner servings for adults. I cooked 2 14oz packages of noodles - about a half of a bag outside of the pot since they didn't fit - which turned out to be maybe a third of a bag more than I needed. So I could probably just cook as many noodles as fit in the pot and be okay for 7 servings.

Okay, THIS IS THE THING WE DID and it was nearly perfect. Except that I didn't use garlic powder and am undecided on whether I should have. Anyway! Fully thaw the tails, cut them open and put the tails on top of the shells, PAT DRY, season with at least salt and paprika, then put 3/4 tbsp worth of PATS OF BUTTER on top of them! Then broil until opaque, which was about 7.5 minutes in my parents' oven.

(Hey, dummy, put the pan in to preheat with the oven, the second batch was much better browned than the first.) Real good! (This would also work well for a party or game night, though it'd have a fair bit of prep required.)

THIS IS DELICIOUS, except wow the miracle happen and I made it TOO salty. GOSH.

I did this with $5 5.5oz of chorizo, 1.5 red onions, 2 russet potatoes, and 1 bunch of kale. It was like, 5-6 meals for me? I wish I had more kale, and possibly the salt wouldn't have been as much of an issue with a different/better sausage. IDK. Like I said, still great, and would totally work for a pork-friendly game night with about 1.5 hours of cooking time.

Next game night: okay, so making it before was fine, BUT. Next time, if there even MIGHT be more than 4 people, just suck it up, buy 2 packages of chorizo and use 5 potatoes and 1.5-2 bunches of kale, okay? Yeesh. Also, Betsy, 3 pounds of potatoes is 3 large potatoes, not 2. Also CHOP THE KALE SMALLER THAN YOU THINK, OKAY, THEN SMALLER AGAIN. ALSO DON'T OVERCOOK IT.

Oh heck yeah, I bet this is DELICIOUS. Bunch of spices, rice, can of chickpeas, can of petite diced tomatoes, jar of quartered artichoke hearts, broth. Whole thing goes in the rice cooker. Serve with lemon.

Slow Cooker Chicken Tikka Masala - Budget Bytes
Low for 6 hours, so I could probably do it for game night if I turned it on at lunch.

Update: Cooked it for myself using the Instant Pot! SHOCKINGLY good, though hey, Betsy, when she says you should add more garam masala if yours is old and weak, MAYBE REMEMBER THAT YOURS IS OLD AND WEAK. Also, don't be a coward, brown yours to the same degree as hers. Anyway, yeah, if you go home at noon to turn this on it'd totally work.

UPDATE: Did it for game night, in the Instant Pot! Started it on normal slow cooker around noon, turned it up to high when I got home about 4:30 and it was perfect textures by 6. And AGAIN, Betsy, at least do 1.5 times the spices you think you need and get fresh garam masala, omfg. Also, .5lbs chicken per person, idiot. And add enough salt at the end!!! And don't forget basmati rice!! And actually, really, you should just fix this the night before, then move it into a pot for reheating so you can fix sufficient rice in the Instant Pot.

this is SO GOOD. It's also super easy and cheap and fairly healthy, especially since I'm enjoying it more without rice than I think I would with!

I halved it. Saute onions, add garlic (jarred was fine), add other spices plus a decent pinch of cayenne, add lentils, add broth (ditto, Better than Bouillon) and diced tomatoes (I used plain), and a big pinch of salt. Bring to a boil, then simmer for like 20 minutes and it's done! It's pretty good like that even if you don't have fresh basil, but OH MAN the fresh basil really makes it excellent. Grilled Veggie Couscous Salad
Grill/roast portabello mushrooms, red bell peppers, lemons. Arugula, Pecorino, couscous.

I was pretty sure this would be great, and IT WAS TRUE. Made it with spring mix, goat cheese, and an added zucchini and onion because why not (and all roasted in the oven, not on a grill).

Update, having made this a few times: basically get arugula and feta and probably a red bell pepper, and then add whatever veggies you want. (I've done it with just those and an onion.

Extra-Easy Lasagna Recipe | MyRecipes
[note to self: this is no longer my go-to lasagna, I use Easy Lasagna II instead.] WOO EASY LASAGNA. Brown meat (ground turkey for me), dump in some minced garlic and maybe some salt and red wine vinegar. Add jarred sauce - I used Classico tomato and basil, which was like 1% sweeter than maybe I wanted, but just fine. Layer in pan with uncooked normal noodles, ricotta, mozzarella. Repeat twice. Add water, bake.

I did this in a 9x9 with 1lb meat and 1 jar sauce, which I thought made a really good hearty result with near-perfect texture. I also baked it the night before and then reheated it the next day, which I turned out really well. Did it for game night, bought a bagged chopped salad and ice cream. It fed 4 (2 of them big guys) with 1 me-sized serving left... I prooobably could have done it for 5 if I'd bought a loaf of French bread too.

Greek Yogurt Alfredo Sauce | Creme De La Crumb
Pretty good, actually! Melt butter, add garlic, add milk or half and half or water. Add yogurt. Add parmesan, heat a little to melt. If you aren't rushed, you can cook your pasta, then drain into a colander and cook the sauce in the same pot.

Pressure Cooker Pumpkin Steel Cut Oats

This is the spaghetti with cream cheese added to the sauce (for your cream cheese leftover needs). So I cooked pasta, and when it wasn't quite cooked I drained most of the water, added frozen veggie ground fake-meat, cooked it more, then added pasta sauce and finished it all cooking together nicely. It's good!

spinach sheet pan quiche – smitten kitchen
YUM. I made this for a board game night – cooked it the night before and reheated it (325F, 25min with foil on), and thought it was EXCELLENT. This is despite the fact that I used a pyrex baking pan, forgot to grease it, and just blind baked the crust with foil pressed in and no weights. :)

It’d feed 4 adults pretty well, and 5 adults with a side (I just did frozen breakfast potatoes). Also, I am slow AND stupidly forgot to have the spinach thawing before I started AND got a workout whisking the cream cheese by hand, so I’d say it took me about an hour to get it into the oven.

MADE TIME #2: as always, second time is sloppier after the first time's great results. Dear Betsy, THAW THE SPINACH BEFOREHAND. If you're cooking it for game night the next day, take it out the SECOND you get home (ditto if you're using frozen cheese!). I was definitely more careless with the squeezing this time and the result is waterier and spinachier. Also, I had way TOO LITTLE filling this time, weirdly; maybe the spinach deflated it, or maybe it was the frozen cheddar . I think next time I'll try 7 eggs.

"really, you saved an egg toast recipe" YES, I DID, for the simple reason that DEAR FUTURE ME, USE AT LEAST A TEASPOON OF BUTTER (kerrygold plz) ON EACH SIDE. I need to figure out how to get the bread crispy without totally cooking the egg through - smaller hole, probably - but STILL, this with a sprinkle of salt on each side and Trader Joe's 21 Spices Salute made the best egg toast of my life.

update two minutes later: betsy, you walnut, cook the bread a little bit on both sides before you put the egg in.

Slow Cooker Buffalo Chicken Mac and Cheese - Slow Cooker Gourmet
THIS WAS GREAT I THOUGHT. Only thing is that the recipe doesn't tell you to buy blue cheese to go with it, which, whaaat. Also, I doubled the recipe, and had too much cheese sauce relative to the chicken IMO. DON'T FORGET THE BLUE CHEESE.

Game night 2/21/18: 6 people, mostly smallish. 2.10 lbs chicken breast with normal doubled amounts in with the chicken while it was cooking. 1.6 lbs pasta. Probably could have only done 1.5x the cheese sauce amount. Had 2 servings of leftovers for me.

Also, my leftovers were arguably even better, so I could really probably make this one the night before. Do the chicken in the Instant Pot, shred, keep a little of the cooking liquid with the shredded chicken and reserve the rest to cook the pasta the next day. Make the cheese sauce the night before and combine with the chicken.

Instant Pot Mongolian Chicken - Sweet and Savory Meals
Could probably do this for a game night with rice. Cut up carrots and boneless skinless chicken breasts, saute in IP, add sauce stuff. Cook 5 minutes, natural release 10 minutes. Back to saute and add cornstarch until sauce thickens.

Update: Ehhhh. Would have been better with less soy sauce, and maybe that's just my half-assed halving, but overall the sauce just didn't quite work for me even after I improved it with rice vinegar. Not BAD, but probably won't make again.

Green curry with frozen broccoli stir fry
(The link is is just to the product, I'm just saving this for reference for what I did though fundamentally I was following the instructions on the Thai Kitchen green curry paste jar) a dumb, easy, delicious curry I just made and didn't expect much out of: start rice. dumb frozen veggies (I used like... a half pound of frozen broccoli stir fry mix?) into colander and rinse and let them sit to remove freezer smell.

saute half an onion in coconut oil HEY BETSY MAKE SURE THEY'RE ACTUALLY COOKED ENOUGH U DOOFO, like do medium-low heat for longer next time, they aren't going to be in the full sauce long enough to cook more. Move them into your eventual eating bowl. Saute green curry paste for 10 seconds, then add coconut milk - probably 1/3-1/2 the paste jar to one of those little cans of coconut milk. Add brown sugar LESS THAN YOU DID THIS TIME THOUGH and some chicken bouillon powder. Stir stir bring to simmer. Add onions, maybe simmer them especially if you realize they aren't actually done ahahaha, ha. Add frozen veggies. Go until all nice and hot! Add some fish sauce, maybe salt, etc, and then lots of thai basil. NOM

Beef & Kale Soup with Potato – SAVOR with SARA
