spinach sheet pan quiche – smitten kitchen
YUM. I made this for a board game night – cooked it the night before and reheated it (325F, 25min with foil on), and thought it was EXCELLENT. This is despite the fact that I used a pyrex baking pan, forgot to grease it, and just blind baked the crust with foil pressed in and no weights. :)

It’d feed 4 adults pretty well, and 5 adults with a side (I just did frozen breakfast potatoes). Also, I am slow AND stupidly forgot to have the spinach thawing before I started AND got a workout whisking the cream cheese by hand, so I’d say it took me about an hour to get it into the oven.

MADE TIME #2: as always, second time is sloppier after the first time's great results. Dear Betsy, THAW THE SPINACH BEFOREHAND. If you're cooking it for game night the next day, take it out the SECOND you get home (ditto if you're using frozen cheese!). I was definitely more careless with the squeezing this time and the result is waterier and spinachier. Also, I had way TOO LITTLE filling this time, weirdly; maybe the spinach deflated it, or maybe it was the frozen cheddar . I think next time I'll try 7 eggs.

Asparagus Quiche Recipe -
Made it for game night and it was good! I used turkey bacon, made in the oven, and then I rolled the asparagus around in the grease and roasted it in the oven too.

HEY, IDIOT. 5 OF US WENT THROUGH 2 QUICHES REALLY EASILY. Also, Pay attention to the cooking time - keep track of the jiggling!!! so you can take it out right after it's done jiggling!! - and then, if you cook it the night before and refrigerate it, please please pay attention to reheating, omg. Oven at 325, foil over the top, at LEAST 20 minutes if the oven is preheated and CHECK IT BEFORE YOU SERVE IT AND DON'T JUST TAKE IT OUT IN THE MIDDLE OF A GAME WITHOUT CHECKING?? good grief betsy

Poached Eggs in White Wine Recipe - 101 Cookbooks
In a large skillet or saucepan over medium-high heat combine the wine, water, shallots, bay leaf, thyme, and salt. Boil for five minutes. Dial back the heat a bit, before carefully cracking eggs into the skillet. Cover and simmer for another five minutes or so - until the eggs whites are opaque, and the yolks are set to your liking. Once poached, remove the eggs with a slotted spoon from the skillet and set aside. Cook the liquid in the pan down a bit more, until you have about 1/2 cup of liquid left, then strain the liquid into a small saucepan. Whisk the butter and flour into a paste, then add this to the strained sauce, stirring until smooth, taste and add a bit of salt if needed.

Buttermilk bacon spinach quiche
... So we only sort of vaguely made this, but I need a way to save what we did so here it is: we did vaguely this, using low-fat buttermilk, skim milk, 4 eggs, mozzarella cheese, frozen spinach, veggie bacon, and a frozen pie crust. It's definitely one of the best quiches we've made.

Made it! Aaaaaand yum. Super super easy, quite delicious, definitely don't believe them on the amount of green onions unless you really like green onions, or the amount of eggs unless you, um, don't like eating. (I used five, and would have used four if we'd added mushrooms.) It's too bad I have so many feelings about pie crusts on my quiche, because this would otherwise be pretty healthy.

Easy Microwave Quiche Recipe
Mine turned out more like scrambled eggs - though that's certainly useful, too - but I think that's because I put chunks of potato in it (.... I had a craving). I'll definitely have another go at making it quiche-like, and in the meantime, this was still a good and veeeeery easy lunch.

Closet Cooking: Roasted Pumpkin Quiche with Caramelized Onions, Gorgonzola and Sage
Made it! We, uh, burnt a lot of the onion (stupid lid), so maybe it was just that the others didn't cook enough, but I wish we'd halved the onion and perhaps cut them a lot smaller. Oh, and I want more gorgonzola. Still, this quiche is pretty good! (We used a plain old frozen pie crust, by the way.)
