Roast Potatoes 3 Ways | Jamie Oliver
1, Olive oil, rosemary, garlic.
2. Clementine skin, butter, olive oil, sage.
3. Bay/thyme, goose fat.

Peel.
Boil until almost mash-ready.
Rough up before roast in colander (crispy bits)
Olive oil, butter, goose/pork/animal fat, tb red-wine vin,
Run rosemary under hot water (wakes oils),
Leave skin on whole-bulb garlic.
Roast 50min: after 40min, flatten a bit with masher
veg  potato
