Pork loin is a lean, mild-tasting cut of meat that can be transformed into a juicy, smoky masterpiece. We first let the blade-end roast sit overnight, rubbed with a mixture of salt and brown sugar for extra juiciness and caramelization. Two cups of wood chips provide just enough smoke without overwhelming the roast’s meaty flavor. Pork always pairs well with fruit, so we recommend making our dried-fruit chutney using apricots, cherries, shallot, and grated fresh ginger.

Make Ahead: You should try the twice-cooked variation, a souvenir of Jeremiah’s days at Stars and incredibly handy for entertaining. Up to 24 hours ahead, roast the meat until almost done (I like to take it out of the oven at 135 instead of 138 degrees) and let it cool completely before slicing it into chops. Rub the chops with more of the marinade or with some garlic, ginger or basil oil, season them, and pop them in the refrigerator. When ready to serve, bring the chops to room temperature then quickly sear on a grill or in a skillet until heated through.
