25 Cooked Perfect Meatballs
1 Tablespoon Olive Oil
1 Green Pepper Diced
1 Red Pepper Diced
1 Yellow Onion Diced
2 Cloves Garlic Minced
2 Teaspoons Italian Seasoning
Salt and pepper to taste
1 15 Ounce Can Tomato Sauce
2 Cups Beef Broth
1 Cup Long Grain Rice
1/4 Cup Grated Parmesan

Heat the olive oil in a large skillet over medium high heat.
Add the onion, green and red bell pepper, and garlic. Saute for 3-5 minutes until the vegetables are starting to soften.
Add the tomato sauce, beef broth, Italian seasoning, salt, pepper, and rice and stir well.
Add the meatballs to the skillet and stir to coat.
Reduce heat to medium-low, cover the skillet with a lid, and simmer for 18-20 minutes, until rice is tender.
Sprinkle with grated parmesan as desired.

This recipe is really more of a template: a quick and satisfying way to get dinner on the table with whatever meat you’d like. Last time I made it I used pork and beef, adding garam masala, shallot and mint. Then I stirred together Samin Nosrat’s very useful basic yogurt sauce. (Save to your NYT Cooking recipe box! Screenshot it! Pin it! Tattoo it!) If you want to make everything look nice, use a spoon to swirl some of the yogurt sauce on a plate and put the meatballs on top, then scatter lots of herbs over the whole thing. Carrots and farro would be good alongside, and play well with that yogurt
