¼ cup extra-virgin olive oil
2 medium onions, thinly sliced
1 medium fennel bulb, thinly sliced
Kosher salt
2 tsp. smoked paprika
1 tsp. fennel seeds, lightly crushed
¼ tsp. cayenne pepper (optional)
2 28-oz. cans whole peeled tomatoes
Freshly ground black pepper
3 Tbsp. unsalted butter
1 tsp. (or more) sugar
Heavy cream, Greek yogurt, or sour cream (for serving; optional)

"Ai Chihuahua" (Pasilla Negro Chile Sauce)
3 Los Chileros Chile Negro chiles
1 cup boiling water
1/2 large red onion
3 large tomatoes
1 teaspoon sugar
3 cloves garlic
salt to taste

Soak negro chiles in boiling water for 8-10 minutes. Remove most of the seeds and combine with water used to boil chiles, and remaining ingredients in a blender. Blend to desired consistency. Salt to taste. Use as an enchilada sauce or serve with blue corn tortilla chips as a dip.

chilaquiles brunch casserole – smitten kitchen
12 small (6-inch) corn tortillas, quartered and fried until crisp
1 1/4 cups (from a 10-ounce can) red enchilada sauce [see Note]
1 3/4 cups (from a 15-ounce can) black beans, drained and rinsed
2 cups (8 ounces) coarsely grated shredded monterey jack or cheddar cheese (I used a mix)
6 to 8 large eggs
Kosher salt and freshly ground black pepper
Thinly sliced scallions, sour cream, diced avocado, and hot sauce, to finish and serve

1 pound cabbage, savoy or green
Olive oil
1 medium onion, thinly sliced
Kosher salt and freshly ground black pepper
3 garlic cloves, smashed and peeled
1 sprig of rosemary or thyme (optional because I’ve forgotten it each time, and not regretted it)

1 cup golden lentil/ yellow moong dal*
1 cup quinoa *
5 carrots medium size
5 celery sticks
4 Roma tomatoes
8 cups water / vegetable broth
2 cups baby spinach chopped *

1.5 teaspoon turmeric*

pad thai summer rolls

14 ounces extra-firm tofu

8 ounces white or brown rice noodles

8-10 white or brown rice spring roll papers (I love Banh Trang brand)

2 cups thinly sliced carrots

1 large handful fresh cilantro


3 Tbsp tamarind concentrate (I love this brand)

3 Tbsp tamari or soy sauce (plus more for tofu)

3-4 Tbsp coconut sugar or maple syrup (or sub brown sugar or honey if not vegan)

1/2 medium lime (juiced // 1/2 lime yields ~1 Tbsp or 15 ml)

1-2 tsp chili garlic sauce (I love this brand // plus more for tofu)

FOR SERVING optional
