No-Bake Espresso Chocolate Cheesecake - Baker by Nature
Ok, so let’s talk about flavor for a second. Because this cheesecake has lots of it! And it comes from the chocolate and the espresso powder. So obviously you should use quality brands for both! You know I’m a major fan girl of Lindt chocolate, so I use their 70% dark chocolate in this recipe. And for the espresso powder, I use King Arthur. I highly recommend them both!!!

Beetroots go well with chocolate, their earthiness combining well with the smooth bittersweet flavour of the chocolate in a brownie, producing the darkest of garnet-coloured cakes. Parsnips are sweeter even than carrots, and demand honey and spice. But courgettes are perhaps the most versatile of the cake-base veg: they bring less of their own flavour so are a good palette for many other pairings.

Recipe: Coconut ice cream | Spectator Life
The combination of coconut milk and creamed coconut make this ice cream intensely coconutty and perfumed, with – thanks to the creamed coconut – the slightest nubbly texture. It’s great on its own, but try painting pineapple rings with rum and tossing in caster sugar before pan-frying or roasting on a high heat until the fruit is burnished and caramelised, for a spectacular pudding.

Recipe: Cherry clafoutis | (flan)
It’s a flan, really: custardy and wibbly, and with a hit of booze macerated into the fruit, a batter-based pud, filled with cherries. It comes, originally, from the Limousin area of France, and for a clafoutis to be truly traditional, the cherries should be unstoned. But may the culinary gods strike me down: I am not fond of an unstoned clafoutis. The risk of cracking a tooth is too great for me to enjoy it, no matter how authentic. The justification is that the cherry pits, like several other stone fruits, hold amygdalin, which is the active ingredient in almond extract, and adds a gentle almondy note to the cherries when cooked. But this is easily aped with half a teaspoon of actual almond extract, without the risk of a trip to the dentist.

Royal wedding: Let them eat elderflower cake | Spectator Life
This cake is a joy. Appropriately, I have used it over and over again for wedding cakes (without the elderflower), and there’s never a crumb left. A generous dose of zest and juice make it splendidly zingy, and drizzling a lemon and elderflower syrup on to the golden sponge ensures it stays tender and moist; the ivory icing has elderflower cordial folded through it, making it floral and fragrant; it smells of English summers.

Recipe: Carrot cake | Spectator Life
I think perhaps I have a slightly romanticised idea of carrot cakes. When I was very small I, like most children, had a book I was obsessed with. I loved that book to the exclusion of all others for maybe an entire year. My parents must have loathed it. That book was Dudley Bakes a Cake. It tells the story of a small, sleepy dormouse called Dudley who enters a baking competition in order to win a bicycle. Lacking carrots for his intended carrot cake entry, he is undeterred. He makes up the deficit with baking powder, which causes the cake to balloon, and the oven to explode. Carried in a wheelbarrow and covered in strawberry icing, it wins the cake contest, and Dudley gets his bike. It’s telling that, some 27 years later, with a little more culinary knowledge up my sleeve, and a lot of carrot cakes under my belt, I am not put off by the realities of the cake: i don’t mind that baking powder wouldn’t work in this way, or that it would leave the most almighty taste of soap. I am won over by even a glimpse of that cake; nostalgia’s hold is tight.
