Massaman Curry Jamie Oliver
1 handful of unsalted peanuts , (30g)
500 g beef chuck
1 x 400 ml tin of reduced-fat coconut milk
1 white onion
1 white potato , (250g)
1 sweet potato , (250g)
1 tablespoon fish sauce , plus extra to serve
2 teaspoons palm sugar
450 g jasmine rice
vegetable oil
6 sun-dried chillies
1 tablespoon coriander seeds
5 cloves
1 tablespoon fennel seeds
1 tablespoon white peppercorns
100 ml coconut cream
1 kaffir lime
5 cm piece of galangal
4 sticks of lemongrass
20 cloves of garlic
5 pieces of coriander root , or ½ a bunch of fresh coriander stalks (15g)
10 small shallots
½ tablespoon shrimp paste
200 g Thai string beans , (yard-long beans)
300 g bok choi
2 carrots
1 cucumber
200 g beansprouts
½ a bunch of fresh Thai basil , (15g)
½ a bunch of fresh mint , (15g)
1 clove of garlic
2 cm piece of galangal
1 fresh bird's-eye chilli
2 limes
2 tablespoon fish sauce
2 tablespoons rice wine vinegar
1 teaspoon palm sugar

1. If you can't find Cubanelles, Anaheim/Hatch chiles are a good substitute.
2. Remove the seeds and ribs from the Serranos before roasting; it's difficult to do afterward.
3. Err on the side of using more hominy rather than less.
4. The photos show diced avocado which are omitted from the recipe. Some slices on top would be a great addition.

2 Russet potatoes
2 Roma tomatoes, diced
1 lime, quartered
1 Serrano pepper, diced
0.25 cups cilantro, minced
1 cup red onion, finely diced

0.5 cup peas, frozen
1.5 cup cauliflower florets

1.0 tablespoon extra virgin olive oil
0.75 teaspoons ground turmeric
1.0 tablespoon ground coriander

8 soft potato rolls
butter, softened

Scrub the potatoes and prick each several times with a fork.
Microwave for 5 mins, then turn them over and microwave for another 5 minutes.
Allow potatoes to cool enough to peel, then roughly mash them in a bowl.
Add peas, cauliflower, and 3 cups water to a pot. Cover and bring to a boil, then reduce heat to a simmer for 7-10 mins until soft.
Drain the vegetables before returning them to the pot and lightly mashing them.
Bring large skillet to medium-high heat and add olive oil. When the oil shimmers, add turmeric and coriander and allow the spices to bloom.
Add tomatoes and stir until a chunky sauce forms. Add 2 tablespoons of water to deglaze pan.
Reduce heat to medium-low. Add peas, cauliflower, potato, and Serrano pepper.
Add 1 teaspoon salt, another 2-4 tablespoons of water (depending on how dry the mashed potato is), and cilantro. Stir to combine.
Allow the bhaji to stew for at least 4 minutes. Season to taste.
Split the potato rolls and liberally butter each side. Toast butter-side down on a medium pan until golden brown.
Top each bun with bhaji, a sprinkle of onion, and a squeeze of lime.

1/2 yellow onion diced
1 clove garlic minced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon kosher salt
1 cup black beans
1 cup corn
1 green bell pepper diced
1 roma tomato diced finely and dried on paper towel
1/2 cup cheddar cheese shredded
2 tablespoons chopped cilantro
1 package egg roll wrappers 24 count
canola oil for frying
8 ounces cream cheese
1/4 cup sour cream
1 bunch cilantro
1/2 avocado


Refactor this into an actual recipe for food. The avocado there is practically homeopathic.
