Sheet-Pan Chicken Saltimbocca With Roasted Potatoes and Crispy Kale recipe | Epicurious.com
I'd replace the kale with broccoli rabe for us. It goes pretty quickly, but prepare the cutlets and potatoes ahead of time.
10/31/16. Chicken Saltimbocca. Very good and very easy. The prosciutto stayed wrapped around the breasts without any pinning, and the combination worked very well. I didn't do the sauce, although I did do a tiny pan sauce by using a half tablespoon of butter and a quarter cup of white wine. If I had had chicken stock, I would have used that too, but really the butter sauce was pretty special. Also cooked two pieces in the oven, according to the Sheet-Pan Chicken Saltimbocca recipe, and they came out very well too.

Pasta with Two Broccolis and Raisin-Pine Nut Sauce
3/1/16. The Splendid Table’s Pasta with Two Broccolis and Pine-Nut Sauce. I did not add the pinoli and used cranberries instead of raisins. This was pretty good, although there wasn’t exactly enough sauce. I don’t need more of a tomato sauce, but the cheese is added after plating, so it doesn’t get involved in the sauce. Seems off. Maybe try again with white wine and parmesan, but I don’t know that it’s all that special. I didn’t get a lot of spark from the salami. I may have skimped on both the broccolis. I had sauteed the broccoli rabe ahead of time. The broccoli cooked quickly in the pasta water. I used whole wheat rotini, let them cook about five minutes, added the broccoli and after about five minutes, both were done.
