Instead of the LTO, do a slaw with cabbage, maybe even some green apples and very herbs to cut the richness of the meat.

10/27/15. I had the oven at 400 degrees and one chicken breast in the small blue pan. It was at 145 after 30 minutes. I turned the oven off and put the chicken back in. It was at 175 ten minutes later. Beware.

2/24/15. Chicken Thighs with Tarragon Mustard. This was fine. I used breasts, legs, and thighs, but the cooking time was OK for all. The bread crumbs didn’t really brown in a 400º oven by the time the chicken was done, but that was OK. Quick and easy. It's a food and wine recipe.
