Barley Salad and Roasted Acorn Squash with Shiro Shoyu Vinaigrette
This is just the vinaigrette recipe, but all you do is roast squash and add goat cheese or perhaps feta. Shiro Shoyu is white soy sauce.

2/16/16. Squash, Apple, and Warm Lentil Salad. As always, had trouble getting the lentils cooked evenly. I think I need to stir them while they are cooking, and cook them 40 minutes rather than 30, as the directions called for. I didn’t add much lemon juice and no chives, though I would have liked to do so. I added some chicken sausage, and Carmela tried out the andouille sausage, which have been even better. I don’t see the point of leaving the skins on the squash, and butternut might be better than acorn anyway. Acorn is a little lighter, milder. Otherwise good. The spices are fine. I added some paprika, which I think was a plus. Changed the recipe to fit. It’s a little labor-intensive; necessary to start early with the lentils, for instance. 1/5/15.Personally, I preferred balsamic vinegar to lemon juice anyway. I used Asian pear instead of apple (because I had it), which was fine, not so sweet, but it burned on the sheet pan. As above, trouble with lentils and cooking squash

Need cooked beef; takes about an hour, with 30 minutes in the oven. 12/19/13. Acorn Squash with Beef Filling. This was good. I’d like to try roasting the squash rather than boiling it, but the difference would be small. I used leftover roast beef, added sage and thyme (both of which added a great deal, especially the sage), and a sprinkle of cayenee, which stood out most at first, and then seemed to meld with the rest. The recipe is quite plain on its own, although I did substitute the parmesan and gruyere with a mild cheese I had. But it makes a great presentation. I had to cut a slice from the squash in order to get to the seeds, then roasted that slice and used it as a pedestal for the squash. One medium squash apiece was just enough.

11/7/12. Acorn Squash Soup, which was good. Spicier than I thought, perhaps because I was generous about the cayenne. I combined butternut with acorn squash. Uses the hand mixer, which was good.
